Banana loaf recipe

Hello all and welcome to my new followers recently.
I have had a request from Caroline for the banana loaf recipe I make sometime.

I have two recipes actually and have made both (mainly because I lost the first one and then found it again)

Both are good and very similar in taste, so its up to you which you try. The second makes a slightly bigger loaf but takes longer. Sorry about the poor formatting, it was a copy and paste job.


Easy banana loaf

Ingredients
Serves: 10
·         125g butter
·         150g caster sugar
·         1 tsp vanilla extract
·         1 egg, beaten
·         2 very ripe bananas, mashed
·         190g self raising flour
·         60ml milk

Preparation method
Prep: 10 mins | Cook: 35 mins
1.
Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
2.
Remove from heat and add the mashed bananas, mix well.
3.
Add the egg, mix well.
4.
Stir in the flour and the milk.
5.
Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
6.
Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until a skewer comes out clean. Leave to cool and enjoy!

 Banana Loaf 2

Ingredients
·         285g/10oz plain flour
·         1 tsp bicarbonate of soda
·         ½ tsp salt
·         110g/4oz butter, plus extra for greasing
·         225g/8oz caster sugar
·         2 free-range eggs
·         4 ripe bananas, mashed
·         85ml/3fl oz buttermilk (or normal milk mixed with 1½ tsp lemon juice or vinegar)
·         1 tsp vanilla extract
Preparation method
1.     Preheat the oven to 180C/350F/Gas 4.
2.     Sift the flour, bicarbonate of soda and salt into a large mixing bowl.
3.     In a separate bowl, cream the butter and sugar together until light and fluffy.
4.     Add the eggs, mashed bananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture.
5.     Grease a 20cm x 12.5cm/8in x 5in loaf tin and pour the cake mixture into the tin.
6.     Transfer to the oven and bake for about an hour, or until well-risen and golden-brown.
7.     Remove from the oven and cool in the tin for a few minutes, then turn out onto a wire rack to cool completely before serving.

    Thank you for adding that. I have been looking at 4 near black bananas over the weekend and thinking I must look up a recipe for banana bread :)

    Does it freeze well?

  2. I always make fat free banana loaf, the recipe comes from a very old freezer cook book. It freezes very well, I cut into slices with a little greaseproof paper between. This is my grandaughters favourite.

  3. Banana Loaf sounds great. I could atempt to make up a recipe for this using ground porridge oats instead of flour, as this would be far more acceptable on my gluten free arthritis diet. I might well have a go at this next week when I`m off work as I need to make a cake I can take on my planned outing to Winchester.

  5. I love to make banana loaf and the top is almost (if not-I'm not sure without checking my recipe) the same one I make.Very yummy and keeps moist for ages.

  6. Fatless Banana Bread

    3Bananas
    2 eggs
    1tsp salt
    6oz sugar
    8oz flour

    The recipe says plain flour but I didn't have any the first time I made it and self raising works fine. I also add 1tsp
    cinnamon.

    Mash bananas add all other ingredients bake Gas 4 150c for 1.30 mins. All depends on your oven so keep an eye on it after 1hr. Book says it has high quality freezer storage life of 2 months. Wouldn't know about that ours never lasts that long. lol.

    The book is called Complete freezer recipes by Mary Norwak.
    I bought it from a charity shop.

  10. Free-Range eggs. Good. There is no recipe worth making unless the eggs are free range. Just my never to be humble opinion
